Istur Chicken

Expense: Very cheap, especially if you use only chicken legs.

Also known as Chicken Cacciatore for the crockpot or slow cooker. This is about as easy as it gets, and most everyone likes it. You can serve it with noodles if you prefer, but rice is traditional.

Servings: 6 (this can easily make more: just add more stuff)

Equipment: 1 crockpot or slow cooker (at least 4 quart size. hint: if you put the stuff in and it spills over the edge, your crockpot isn´t big enough).

Ingredients:
4 pounds chicken pieces with bones - remove skin
1/4 teaspoon black pepper
1/4 teaspoon salt
10 oz. mushrooms, quartered
1 1/2 cups thinly sliced onion
2 teaspoons Italian herb seasoning*
1/3 c all purpose flour
2 bay leaves
1/4 cup beef broth
14 oz can whole tomatoes in juice, drained & coarsely chopped
12 pitted black olives, sliced (optional)
1 tablespoon drained capers (optional)
cooked rice or noodles
* If you don´t have this, use what you´ve got: garlic powder, basil, oregano and parsley are a good combination.
Steps
1. sprinkle chicken with pepper.
2. put chicken in your crockpot/slow cooker.
3. Combine mushrooms, onions, remaining herbs & spices & flour.
Toss to coat shrooms.
4. Put mushrooms on top of chicken.
5. Add bay leaves, broth & tomatoes.
6. Cook on low about 8 hours.*
7. During last 15 minutes, stir in capers & olives if you are using them.
8. Remove bay leaves before serving over rice or noodles.
* Don´t worry about over-cooking this. Timing the rice/noodles to the chicken is not crucial.
