I usually like to have meat with dinner but this vegetarian dish is one of my all time favorites. Sometimes we'll double, triple or even quadruple the garlic in this dish. Have the Altoids standing by.
- Ingredients:
- 3/4 lb. thin spaghetti
- 1 bunch broccoli, about 1 lb.
- 3 Tbsp butter or margarine
- 2 medium cloves garlic, minced
- 1/3 lb. Roquefort, Gorgonzola or your favorite blue cheese
- 1/2 cup grated Parmesan cheese

- Boil spaghetti on top of stove according to package directions.
- During this time, prepare broccoli. Cut it into flowerets and trim the tough skin off the remaining stem pieces and julienne them.
- Place broccoli in a 2-quart microwave safe dish with 1/4 cup water. Cover, nuke on high for 4-5 minutes. Let stand for 2 minutes. Uncover.
- Place butter & garlic in a microwave safe dish, nuke on high for 1.5 minutes. Add the blue cheese, cover. Nuke again for 2 more minutes, stir until blended.
- Place cooked spaghetti and broccoli in a large serving bowl. Toss with cheese sauce.
- Sprinkle with Parmesan cheese and pepper.
- Toss and serve steaming hot.
Makes 4 servings but doubles nicely. Serve with a loaf of fresh Italian or French bread, a sliced tomato salad and either red or white wine.
You can prep everything ahead of time and leave in the individual cooking bowls in the fridge. Then you only have to boil the pasta, nuke two things and toss the whole thing together during gaming.
